**Cabbage Roll Soup
Yield: 8 servings
Ingredients:
- 1 lb. hamburger
- 1 lb. sausage
- olive oil
- 1 medium onion, diced
- 3 carrots, shredded
- 3 cloves garlic, minced
- 5 cups beef broth
- 1 medium sweet potato, diced into 1/2-inch cubes
- 1 (28 ounce) can stewed tomatoes, diced
- 1½ cups tomato juice
- 2 tablespoons tomato paste
- 1/2 tsp thyme
- 1 teaspoon paprika
- Pepper
- Salt
- 4 cups fresh cabbage, chopped and shredded
- 1 cup CaliRice or ¾ cup uncooked rice
Directions:
- Brown sausage and hamburger in a very large pot.
- Drain fat.
- Cook onions and carrots in olive oil.
- Add the garlic.
- Add cabbage and cook until soft.
- Add broth, sweet potato, tomatoes, sausage and hamburger, thyme, pepper. and salt.
- Boil about 7 minutes or until potatoes are cooked through and tender
- Reduce heat to simmer
- Simmer soup for 45 minutes.
